Back in the old days, cowboys fixed up these favourites on long cattle drives by grilling seasoned steak over a red-hot Mesquite fire, then wrapping ‘em up in a warm flour tortilla. From there, the fame of the fajitas spread like wild fire through Texas. So much so, restaurants started serving ‘em up with special fixins like guacamole, sour cream, Pico de Gallo, lettuce and cheese.
Now while fajitas became famous throughout Texas and the rest of the U.S., it wasn’t until 1986 that Canada got its first taste of these treats when the original Lone Star opened in Ottawa. We taught y’all how to roll ‘em, eat ‘em, even how to pronounce ‘em! Today we still do them as authentic as you can get. We use real skirt steak which we grill over real Mesquite wood imported right from Texas. We even make our own fresh flour tortillas in our very own custom-made tortilla oven the second y’all order them and not a minute before! We hope y’all enjoy our fajitas as much as we enjoy serving ‘em up!
